Expect a wealth of fruit character on the nose – lemon sherbet, melon and green apple. The palate is dry, crisp and bright with intense mineral freshness and a spritz of citrus fruit, with a wonderful smoothness from the chalky terroir. The wine has excellent length and leaves the palate with flavours of light tropical fruit and a touch of honey.

The Chardonnay is perfect for expressing our chalky terroir and the beauty of Dorset summers - and the mild and dry autumn of 2022 provided an excellent harvest.

Wine Making Notes

A good season of growth led to us being able to pick plush, well ripened bunches of chardonnay with good sugar levels and expression of character for a still wine.

After the short journey to our winemakers, the grapes were crushed and destemmed to aid in good levels of extraction in the press, with the free run (initial run of juices under very little pressure) and second press being cold settled in seperate stainless steel tanks.

The total of the juice was then racked off any settled sediment and blended in together before being inocculated with our selected yeast strain to maximise on development of flavour and mouthfeel.

Once through this fermentation, the wine then underwent full malolactic fermentation, which we find builds upon of the smooth, sumptuous mouthfeel from our terroir.

A little back sweetening was performed to work with the natural fresh acidity and citrus characteristics, before a final round of filtering and bottling.
