Steven Spurrier considered this 100% Chardonnay Bride Valley’s signature wine and one which always accompanied him on his travels, being a true reflection of Bride Valley Vineyard. This latest vintage results from the high quality harvest of 2018 and we consider it to be our best yet!  A beautifully bright, vibrant pale lemon appearance with a persistent stream of tiny bubbles. The nose is fine & elegant with layers of creamy, citrus fruit with points of toasted brioche, supported with notes of green apple and stone fruit. The palate is immediately crisp & fresh but leads to ripe, broad, citrus fruit with a luxurious texture balanced by sherbet acidity.

Wine Making Notes

The best quality chardonnay bunches are carefully picked in the vineyard in Autumn before being transported to the winery where they are gently whole bunch pressed to maximise the extraction of the delicate notes cultivated in our vines by our chalky terroir.

The juice is then cold settled in stainless steel tanks to clarify and purify before innoculation with our selected yeast strain best suited to further developing the phenols.

The ensuing wine was then put through full malolactic fermentation to nurture the creamy, full notes we enjoy in our Blanc de Blancs.

The wine was then bottled in 2019 for secondary fermentation in the Traditional Method, with the current released batches having spent 5 years on the lees perfecting those buttery, smooth notes encouraged by autolysis.

At disgorging, no sweetening agent is applied to let the natural dryness of the wine shine, well balanced by the smooth, creamy, stone fruit notes.

Vintage Notes

Bud burst was delayed this year, due to the cool weather following “The Beast from the East” in March. Warm and settled weather from May to July encouraged growth and the vines flourished. Flowering was first observed in mid June, bringing excellent flowering and fruit set. The very warm and dry weather set us up for our best harvest to date, with 83 tonnes in total.
