A delicious palate of red fruit - cranberry, redcurrant, raspberry… almost summer fruit pudding with real verve and freshness from balanced citrus acidity. More depth and intensity follow leading to a long, fine finish.
A wonderful appearance in the glass; a beautiful salmon pink with constant fine mousse and great energy.

Wine Making Notes
Wholebunch pressed, the pinot noir and pinot meunier spent time with skin contact to extract the perfect colour and flavour profile. The first and second press run (cuvée and taille) were cold settled seperately before being innoculated with our chosen yeast for primary fermentation.
After primary fermentation, the wine then underwent full malolactic fermentation to further bring out the smooth, buttery characteristics introduced by our unique terroir.
Our blending before tirage (for secondary fermentation in the bottle) includes a little chardonnay to further those creamy brioche characteristics, and the wine then spent 5 years on the lees to maximise the flavour profile and create a wine we are incredibly proud to call our own.
